Ingredients
- For sauce:
- gnocchi or other pasta
- Pomodoro Sauce
- Basic Tomato Sauce
- 6 cups "A Ita Cucina" tomatoes (or whole peeled plum tomatoes)
- 2 bay leaves
- 1/2 medium onion cut into a medium dice
- 1/2 tspn dried basil
- 1/2 tspn dried Mediterranean oregano
- Salt and pepper to taste
- 3 tbsn grape-seed oil
- tbsp EVOO
- 2 cloves minced garlic
- 1/4 to 1/2 cup red--or white wine for deglazing
- 1 to 2 cups Pomadora sauce or more
- Basil and or parsley for garnish

Step 1
Pomodoro Sauce
In a heavy skillet, saute the onions in grapeseed oil. Add bay leaves
and tomatoes. Season with salt and pepper. Break up tomatoes with
a wooden spoon. Add oregano and wine. Simmer for 30 minutes and stir often to keep the sauce from sticking. Sauce may be placed in containers and frozen for future use.
Cook gnocchi or pasta in salted water
For pasta sauce:
Add EVOO and minced garlic and gook for 1 minute
deglaze with wine
add pomodora sauce
add chiffonade basil and parsley
Add cooked Gnocchi or any other pasta
