Pineapple-filled Sweet Potatoes

Ingredients

  • 3 Large Sweet Potatoes
  • 1 Tbs. Margarine
  • 1/2 tsp. Salt
  • 1/2 tsp. Cinnamon
  • 1 Tbs. Milk
  • 1/2 Cup Pineapple, crushed, drained
  • 1/2 Cup Pecan pieces, optional
  • 1/2 Cup Miniature Marshmallows
  • 2 Tbs. Pineapple Juice, heated

Preparation

Step 1

Bake sweet potatoes at 450 degrees until soft. Split potatoes in half lengthwise, scrape out meat. Take care not to break skins. In a bowl, mash potatoes, adding margarine, seasonings, milk, pineapple and nuts (if desired). Refill the skins and place in a 1 quart casserole. Top with marshmallows. Baste with warmed pineapple juice. Bake at 325 degrees for 20 minutes until marshmallows are lightly browned. Serves 6.
