Large Sweet Potatoes
Cup Pineapple, crushed, drained
Cup Pecan pieces, optional
Cup Miniature Marshmallows
Tbs. Pineapple Juice, heated
Bake sweet potatoes at 450 degrees until soft. Split potatoes in half lengthwise, scrape out meat. Take care not to break skins. In a bowl, mash potatoes, adding margarine, seasonings, milk, pineapple and nuts (if desired). Refill the skins and place in a 1 quart casserole. Top with marshmallows. Baste with warmed pineapple juice. Bake at 325 degrees for 20 minutes until marshmallows are lightly browned. Serves 6.
