Ingredients

  • 1 cup tomato sauce
  • 1 tsp oregano
  • 1 tsp basil
  • 1/4 tsp garlic powder
  • 1 lb ground beef
  • 3 slices whole-wheat bread
  • 1 egg white
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 pkg frozen chopped spinach, thawed and drained
  • 1 cup mozzarella
  • 1 tbsp parmesan cheese

Preparation

Step 1

1. Heat oven to 350.

2. Combine tomato sauce-garlic powder.

3. Mix beef-salt and pepper and half of tomato sauce. .Press into an 8x10" rectangle onto a sheet of wax paper.

4. Spoon spinach over half. Place cheese on top and fold meat over. Pinch edges to seal. Place in a shallow baking pan on a rack. Top with rest of tomato sauce and cheese.

5. Bake 1 hour. Let rest 5-10 mins before slicing.

This was really delicious - David's new favorite meatloaf. Very easy. I whirred up the breadcrumbs in the processor before adding to the meat.
