Ingredients

  • ½ c chocolate chips
  • 2 sticks of butter
  • ¾ c apf
  • 1 tsp baking powder
  • 1/3 c coco powder
  • pinch of salt
  • 1 tsp vanilla
  • 1 c sugar
  • 3 eggs (added one at a time)
  • *Icing*
  • 3 oz unsweetened chocolate
  • 1 stick of butter (room temp)
  • 8 oz softened cream cheese
  • 1 tsp chili powder
  • ½ tsp cinnamon
  • pinch of salt
  • 1 tsp vanilla
  • 3 c icing sugar

Preparation

Step 1

1. On a double boiler melt the chocolate and butter. While that is melting in a seprate bowl mix the dry ingredients together.
2. Once the chocolate and butter have melted add the eggs in one at a time mixing the batter consistently so that the eggs to scramble. Now mix in the dry with the wet.
3. Bake at 350 for 20 mins.
4. For something different – add a peanut butter cup in the middle of each cupcake before placing in the oven.
5. For the icing: melt the chocolate on a double boiler. Mix together the butter, cream cheese, chili powder and cinnamon. Once the chocolate has melted add that to the mix with the powdered sugar and mix really well. Chill in the fridge before icing cupcakes.
