Ingredients

  • 3 medium potatoes, cooked
  • 1 tsp sugar
  • 1 tsp vinegar
  • 1/2 cup very finely chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped dill pickle
  • 1 1/2 tsp salt or more
  • 1 1/2 tsp celery seed
  • 3/4 cup mayonnaise
  • 2 hard boiled eggs or more

Step 1

Choose potatoes of equal size so all will get done at the same time. Scrub well. Cook in boiling, salted water. Begin fork testing after 25 minutes. When jut tender, remove from heat and drain. Shake in pan over low heat to dry. Peel while hot, holding on paper towel. Cut into bite sized cubes. While warm sprinkle with sugar and vinegar or marinate on 1/4 cup French dressing. Add seasonings and other ingredients. Toss in mayonnaise to blend, then carefully fold in egg slices. Cover and chill. Add more mayonnaise and salt, if needed.
