Ingredients

  • 5 lb. pork w/bone (cheap cut) OR 5 lb. ground pork
  • 2 medium onions, quartered
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 plus teaspoon allspice
  • 1 teaspoon nutmeg
  • 1 plus teaspoon cloves
  • 1 teaspoon cinammon

Preparation

Step 1

Boil pork until almost cooked. Skim fat from water. Strain liquid and reserve.

Grind pork with quartered onions and return to pot. Add some reserved liquid to pork mixture to reach desired texture. Add spices - adjust to taste, if necessary. Simmer, uncovered over low heat for 5 hours.

Cool, pour into crocks and refrigerate.

Freezes well. Serve on toast or crackers or for sandwiches.
