Cheese and Broccoli Topped French Toast

Ingredients

• 1 package (10oz) frozen broccoli
• 3 eggs
• 2 tablespoons water
• Salt & pepper
• 4 slices bread
• 3 tablespoons oil
• nutmeg
• 1 package (6oz) sliced swiss cheese

Preparation

Step 1

In 12-inch skillet cook broccoli according to package directions.Remove with slotted spoon and set aside.Discard cooking liquid.In pie plate beat eggs,water,1/2 teaspnn salt,and 1/8 teaspoon pepper until frothy.Soak bread in egg mixture until absorbed.Fry bread in hot oil until crisp and browned.Top with broccoli,sprinkle lightly with salt and pepper and nutmeg,then cover with cheese.Cover and cook until cheese melts.
