Ingredients
- ■One 9" pastry shell, baked
- ■1/2 cup diced cooked ham
- ■10 ounces frozen chopped spinach or 2 cups packed fresh spinach, chopped
- ■2 tablespoons chopped onion
- ■2 tablespoons butter
- ■3 eggs
- ■1-1/2 cups half-and-half
- ■1/2 teaspoon salt
- ■1/2 teaspoon pepper
- ■1/2 teaspoon nutmeg
- ■1/4 cup Gruyere cheese

Preparation
Step 1
Makes 6 servings.
Bake piecrsut at 400° for 7 minutes; remove from oven.
Saute ham, spinach, and onion in 2 tablespoons butter until all liquid has evaporated. In a separate bowl, beat eggs with cream and seasonings. Add to other ingredients, blend, and pour into pie shell. Bake at 375 degrees F for 40 minutes or until set. Cool and serve.

Great Recipe! To make any quiche extra high and fluffy try adding half cup mayonnaise. Made this one even better. –
