GROUND****Basil Mushroom Chicken (or Turkey) Meatloaf 1 Picture

Ingredients

  • 1 tbsp. olive oil
  • 2 cups thinly sliced mushrooms
  • 1 onion, diced
  • 1 clove garlic, minced
  • 1 1/2 tsp. dried basil
  • 1/2 cup panko
  • 30 grams grated parmesan cheese
  • 2 green onions, minced (optional)
  • salt and pepper to taste
  • 1 egg or equivalent
  • 1 lb. ground chicken or turkey
  • 1/4 cup cherry tomato sauce or marinara sauce of choice
  • 1/2 cup (60 grams) shredded mozzarella or Kraft 4 cheese blend

Preparation

Step 1

Saute vegetables in olive oil over medium heat until softened. Set aside to cool.

Combine panko, parmesan, green onions, salt, pepper, egg and cooled onion mixture, add turkey or chicken and blend together.

Divide into three portions, one for now and two for the freezer.

To serve, press into small loaf pan and top with sauce.

Bake in 350 oven for 30 minutes. Remove and add cheese to top and bake for a further 10 - 15 minutes. Let sit for five to ten minutes then divide in half and serve.
