Ingredients

  • 4 boneless, chicken breasts
  • salt and pepper
  • flour
  • 1/4 cup vegetable oil
  • 1/2 cup vodka
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 cup chopped tomato
  • 1/4 cup heavy cream
  • 2/3 cup slice scallions
  • Pasta
  • French Bread

Preparation

Step 1

Pound chicken into cutlets. Season with salt and pepper and dust with flour. Add oil and saute on both sides for a few minutes. Transfer to platter. Deglaze pan with vodka (away from flame), return to heat and cook until nearly evaporated. Add broth and lemon juice. Return chicken to pan and ook on each side for 1 minute. Transfer chicken to warm platter. Stir in tomato and cream in sauce. Heat through; pour over chicken. Garnish with scallions.

If serving with pasta, you might want to double sauce.
