Ingredients

  • 2 pounds fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 2 tablespoons light brown sugar
  • 1 red sweet pepper, cut in half and sliced
  • 2 tablespoons olive oil
  • 3 tablespoons soy sauce
  • 8 ounces sliced mushrooms
  • 4 ounces goat cheese
  • 4 ounces cream cheese
  • 1 cup prepared dry bread crumbs

Preparation

Step 1

Place the trimmed beans in a medium pan with three cups of boiling water. Return to a boil and cook for three minutes, until the beans are al dente. Drain in a colander and set aside.

Preheat oven to 375 Degrees.

In a casserole, combine cooked green beans with the sliced mushrooms and red peppers. Toss with 2 tablespoons olive oil and soy sauce to coat. Roast at 375 degrees for 15 minutes. Remove and set aside.

Preheat oven to 400 degrees.

In a largeskillet over medium high heat, saute the onions in 2 tablespoons olive oil and two tablespoons of light brown sugar until the onions are soft and tender. Toss with dry bread crumbs until completely covered. Set aside for topping.

Blend softened cream cheese with the goat cheese and distribute over the vegetable mixture. Toss to incorporate. Place the breaded onions on top of the vegetable and cheese mixture and bake in a 400 degree oven and bake for 10 minutes.

Sprinkle with diced parsley and serve hot.
