Any short- or medium-grain white rice will do in this recipe, but Keller's mother prefers Japanese rice, or Japonica, which has a slightly sticky texture.

Preparation

Step 1

1. Throw rice into a pot, add H2O to cover, and scrub - rolling rice between your hands & moving fingers as if you're massaging it - until water turns a milky white.
2. Drain, taking care not to let any grains escape.
3. Add fresh water, scrub again, and drain, repeat using fresh H2O.
4. Rinse rice 3 more times w/o scrubbing, until H2O runs fairly clear.
5. After draining the 6th time, add 3c fresh H2O.
6. Bring to a boil.
7. Reduce heat to low, & simmer until H2O evaporates, about 8 min.
8. Remove from heat & immediately cover pot w/a tight-fitting lid.
9. Let sit 15-20 min.
10. Fluff before serving.
