  • 1 C walnut halves or pieces
  • 3/4 C flour
  • 1 C sugar
  • 1 med orange
  • 1 t salt
  • 7 eggs separated
  • 1 t cream of tartar

Step 1

Heat oven to 325. In food processor, combine walnuts and flour. Process until nuts are finely ground, set aside. Set aside 2 T of sugar.
Finely shred peel from orange and juice the orange. In large bowl, combine the remaining sugar, 1 t of orange peel, 2/3 C of orange juice, salt, egg yolks. Beat on high 4 min or until very think and pale. In aother large, clean, dry bowl, using clean, dry beaters, beat the egg whites and cream of tartar until soft peaks form. Gradually beat in the 2 T reserved sugar until egg whites are stiff but not dry. Spoon about a quarter of the egg whites over yolk mixture. Add nut mixture. Fold together with a large rubber spatula. Add the remaining egg whites and fold to combine. Scrape batter into an ungreased 10" tube pan with removable bottom; spread evenly in pan. bake 35 - 40 min until cake is golden brown and springy ot touch.
