  • 1 1/3 cups sugar
  • 6 tablespoons butter, softened
  • 1 tablespoon lemon zest
  • 3 tablespoons lemonade, frozen concentrate, thawed
  • 2 teaspoons vanilla
  • 2 eggs
  • 2 egg whites
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/4 cups buttermilk
  • 2 tablespoons butter, softened
  • 2 teaspoons lemon zest
  • 2 teaspoons lemonade, frozen concentrate, thawed
  • 1/2 teaspoon vanilla
  • 8 ounces neufchatel cheese
  • 3 1/2 cups sugar, powdered

Preparation

Step 1

1. Preheat oven to 350

2. Beat sugar, butter, zest, lemonade concentrate, and vanilla with mixer until well blended (about 5 minutes). Add eggs, one at a time. Combine flour, baking powder, salt, baking soda. Combine with a whisk. Add alternately with buttermilk to sugar, beginning and ending with flour.


3. Pour into 2 9" sprayed pans. Sharply tap on counter to remove air bubbles. Bake at 350 about 20 minutes. Cool in pans 10 minutes on rack, then on rack out of pans.

4. Beat butter, zest, lemonade concentrate, vanilla, and cream cheese until fluffy. Beat in sugar just until blended. Chill 1 hour. Frost layers.

Better to add a layer - shouldn't need more frosting.
