Ingredients

  • 3 cloves minced garlic
  • 1 inch to 1 1/2 inch piece
  • of peeled ginger
  • 1 Tablespoon chili powder
  • 2 medium thin-sliced shallots
  • 2 Tablespoons red miso
  • 2 Tablespoons olive oil
  • 1/8 teaspoon black pepper
  • 1 cup chicken broth
  • zest of 1 orange
  • juice of the same orange
  • 1 block firm or extra-firm tofu,
  • rinsed, patted dry with a towel,
  • and cut into 1/2 inch slices

Preparation

Step 1

Preheat oven to 425 degrees. Combine all ingredients except the tofu. Lay the tofu in a 9 x 13 inch baking dish, and pour the marinade over the tofu. Bake until most of the liquid has evaporated and turned saucy, about 30-40 minutes. ( The tofu can also marinate in the refrigerator for 1 hour or overnight. )
