- 1/2 stick butter, cubed

Preparation
Step 1
Preheat oven to 500 degrees.
Put potatoes into BOILING water with baking soda; boil for 1 minute, drain and put potatoes back in pot on stove with stove on and mix for 30 seconds.
Add cubes of butter and salt and mix unit melted.
Pour potatoes onto parchment lines cookie sheet, pour some EVOO over potatoes and put in oven for 30 minutes.
