Ingredients
- 2 bunches (about 6 cups) watercress , trimmed
- 1/4 pound sliced [smoked salmon], cut into 1/2-inch-wide strips
- Salt and freshly ground pepper, to taste
- 1/2 yellow or red watermelon, peeled, seeded and cut into 1/2-inch cubes

Preparation
Step 1
1. In a large bowl, toss watercress & [smoked salmon] w/ half the (fennel) dressing.
2. Season lightly w/salt & pepper & divide among 4 individual plates.
3. In the same bowl, toss watermelon w/remaining half of the dressing & divide among the plates of watercress.
4. Top w/shaved Parmesan before serving.
