Ingredients
- 1/3 C Lemon Juice
- 1 T cornstarch
- 1 C sugar
- grated zest of 2 lemons
- 6 egg yolks
- 1/2 C unsalted butter cut into 1/2" pieces

Step 1
In the top of a double boiler, whisk lemon and cornstarch. Add sugar, zest and yolks. Whisk to combine. Bring boiler to a simmer, whisk mixture until thick enough to coat a wooden spoon, about 20 min. Whisk in the butter, one or two pieces at a time. When the butter is combined, transfer to bowl, cover with wrap and refrigerate.
