Ingredients

  • 1/3 C lime juice
  • 1 T cornstarch
  • 1 C sugar
  • grated zest of 3 limes
  • 6 egg yolks
  • 1/2 C butter cold, unsalted, but into 1/2" pieces

Step 1

Whilk lime juice and cornstarch in double boiler. Add sugar, zest, yolks, whisk to combine. Bring bottom of double boiler to a simmer. Whisk the mixture until it's thick enough to coat the back of a wooden spoon (about 20 min). Whisk in butter one or two pieces at a time. When all the butter is combined, transfer the curd to a clean bowl. Cover the surface of the curd with plastic wrap in the refrigerator to cool.
