Ingredients
- 2 Tablespoons butter
- 1 medium chopped yellow onion
- 1 pound sliced mushrooms
- 1 teaspoon paprika
- 2 Tablespoons flour
- 2 medium peeled and diced potatoes
- 2 ( 15 ounce ) cans of broth
- ( chicken or beef )
- 2 teaspoons dill
- 2 bay leaves
- 1/4 cup sherry
- 1/2 cup sour cream ( optional )

Preparation
Step 1
Melt the butter at medium-high, then saute the onion until transparent. Add the mushrooms and paprika and saute until almost soft. ( Add a bit more butter if needed. ) Lower heat and add the flour. Cook, stirring occasionally, about 2-3 minutes. Add potaoes, broth, dill, bay leaves, and sherry. Bring to a boil on high heat. Lower heat and partially cover. Simmer for 30-45 minutes. Remove pan from heat and add sour cream.
