Preparation

Step 1

Instructions
Mix dry ingredients together and set aside.
Combined all wet ingredients (except eggs and chips) together with a whisk or electric blender until smooth, then add the 2 eggs.
Slowly add the dry mix to the wet and mix until just combined. Add chocolate chips and mix again a few time.
Cover bowl of dough with plastic wrap and refrigerate for 4 hours at least to allow the dough to firm up.
Once you are ready to bake the cookies, preheat the oven to 350.
Using a large (2Tbl) cookie dough scoop, scoop boll of the mixture out and roll them between your hands, making them into round balls.
Place the balls onto cookie sheets 2” apart.
Bake for 10-12 minutes (NO more than 12 minutes). After 6 minutes, turn the pans around in the oven, and bake for 5-6 more minutes. The cookies may be slightly brown when you take them out, but they should still look slightly underdone for the best results.
Cool them on the pans for 2 minutes before removing to wire wracks or plates.
Serve warm or room temperature, and enjoy!
Covered in plastic wrap or in a zip lock bag, these cookies will stay fresh and soft for a week - provided there are some left by that time!
