Ingredients
- 1 cup undooked pearl barley
- 1 dried bay lead
- 1/2 tsp fennel seed
- 1 1/2 Cups baby-carrots, halved crosswise
- 1 Cup sliced celery (2 medium stalks)
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1 cloves garlic, finely chopped
- 1 large dark-orange sweet potato, peeled, cubed
- 1 1/2 cups frozen corn
- 1 1/2 cups frozen green beans
- salt & pepper
- 2 cans (14ox each) vegetable broth
- 6 cups water
- 1 can (14.5 oz) diced tomatoes with basil, garlic & oregano, undrained

Preparation
Step 1
Spray 5-6 quart slow cooker with cooking spray. In cooker, layer all ingredients except tomatoes; do not stir.
Cover, cook on low heat setting 6 to 8 hrs
About 10 min before serving, stir in tomatoes. Cover;cook on low heat about 10 min longer or until tomatoes are hot, remove bay leaf.
