Ingredients

  • 1 cup undooked pearl barley
  • 1 dried bay lead
  • 1/2 tsp fennel seed
  • 1 1/2 Cups baby-carrots, halved crosswise
  • 1 Cup sliced celery (2 medium stalks)
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 cloves garlic, finely chopped
  • 1 large dark-orange sweet potato, peeled, cubed
  • 1 1/2 cups frozen corn
  • 1 1/2 cups frozen green beans
  • salt & pepper
  • 2 cans (14ox each) vegetable broth
  • 6 cups water
  • 1 can (14.5 oz) diced tomatoes with basil, garlic & oregano, undrained

Preparation

Step 1

Spray 5-6 quart slow cooker with cooking spray. In cooker, layer all ingredients except tomatoes; do not stir.
Cover, cook on low heat setting 6 to 8 hrs
About 10 min before serving, stir in tomatoes. Cover;cook on low heat about 10 min longer or until tomatoes are hot, remove bay leaf.
