- 1 cup very warm water (110 to 120 F)
- 1 packet yeast
- 1 tablespoon honey or brown sugar
- 1 teaspoon salt
- 2 1/2 to 3 cups bread flour (13 ounces) -- weigh for best results
- 1 1/2 tablespoons olive oil plus more for the bowl

Instructions
In a glass measuring cup, combine the warm water with the yeast and honey. Let it sit until it starts to bubble and foam. If you're using quick yeast or Rapid Rise, skip this step and just mix the yeast with the flour.
In bowl of a stand mixer, combine the salt and flour. Add the water mixture to the salt and flour, stirring until well mixed, then add the olive oil. With the dough hook, knead the dough for about 5 minutes or until the dough is smooth and elastic. Transfer the dough to a clean bowl lined with more olive oil. Cover and let rise for about an hour. Punch down, cover tightly (or transfer to a large zipper bag) and put in the refrigerator overnight. Every so often, punch the dough down, as it will continue rising in the refrigerator.
To bake, remove from the refrigerator and press the dough into 4 circles (or however many you need) about 8 inches each while it's cold and easy to handle. Let the dough circles sit for about an hour at room temperature. Dough bubbles will form. If you don't have a pizza stone and want to use a dish, shape 2 circles in large 10 or 12 inches pizza rounds. This is what I did last night, but I didn't go all the way to the edges of the dish.
