Ingredients
- 1/4 cup (1/2 stick) sweet butter
- 4 oz. cheddar, grated
- Pinch of cayenne pepper
- Pinch of salt
- 3/4 cup all-purpose flour
- 1 cup (3 1/2 oz) chopped pecans

Step 1
Blend the butter and cheese together. Add the pepper, salt and flour, and stir to form a smooth dough. Roll into a 2-in thick log, wrap and refrigerate the dough for 15 minutes until firm.
Preheat the oven to 350F. Slice the dough into 1/4 in thick pieces and place on baking sheet. Pres pecans into the tops of each cookie and bake for 10-12 minutes until golden.
Transfer to a wire rack to cool. Store the cooled cookies in an airtight container for 5-7 days.
