Tuna and Spinach Tortellini 0 Picture

Ingredients

  • 16 ounces spinach tortellini
  • 1 tablespoon olive oil
  • 1/8 teaspoon crushed red pepper flakes
  • 2 cloves garlic, pressed
  • 10 ounces tomato juice
  • 3 to 4 large plum (Roma) tomatoes, diced
  • 1 cup frozen spinach, thawed
  • 1 (12-oz.) can tuna in water, drained
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Preparation

Step 1

Cook tortellini according to package directions. Meanwhile, heat the olive oil in a skillet over medium-high heat; add crushed red pepper flakes and garlic and saute for 1 minute. Add tomato juice and bring to a boil. Add tomatoes and spinach then reduce heat to low. Add tuna and lemon juice. Salt and pepper to taste and toss with tortellini before serving.

SERVING SUGGESTION: Serve stir-fried zucchini and yellow squash on the side.
VEGETARIAN: Omit the tuna and enjoy!
KOSHER: No changes necessary.
