Ingredients
- 1 lb. carrots, cleaned, peeled and sliced
- Water
- 1 c. vinegar
- 3 jalapeno peppers, sliced
- 1/2 tsp. basil
- 1/4 c. fresh chopped cilantro

Preparation
Step 1
Cook carrots in salted water so they are still crunchy, not too long. Drain and cool. Combine 1 cup water, 1 cup vinegar, peppers and carrots. Marinate 3 days. Remove peppers. Add basil and cilantro.
