Zatarain's Baked Kielbasa and Shrimp Jambalaya

This uses Zatarain's Jambalaya Mix with my preferred cooking methods and ingredients. It is an easy meal which I doubled for leftovers that heat easily in the microwave. You can add additional ingredients such as diced tomatoes and or diced green peppers. I have even added thawed frozen peas to the mixture!

Ingredients

  • 4 3/4 cups water
  • 2 packages ZATARAIN'S Jambalaya Mix, Original
  • 1 tablespoons olive oil
  • 1 package (13 to 16 ounces) smoked kielbasa, sliced into 1 inch pieces
  • 1 pound large raw 16/20 ct shrimp, shelled and deveined

Step 1

Preheat oven to 375 degrees.
Mix water, Rice Mix, olive oil and kielbasa sausage in large chefs skillet until well blended. Place the shrimp on top. Bring to a boil.
Transfer the skillet to the oven and cook uncovered for 25 to 30 minutes or until most of the water is absorbed and rice is tender.
If the jambalaya is still watery on the bottom , set on medium heat burner for 2 to 3 min until water is absorbed. Let stand 5 minutes. Fluff with fork before serving. Serve with a crusty bread and salad.
