Preparation
Step 1
Line a shallow baking pan with foil; set aside. Combine egg, 1/3 cup of the spaghetti sauce, the bread crumbs, onion, green pepper, Italian seasoning and garlic salt in a large bowl. Add ground beef and mix well.
Cut cheese into long sticks about 1/2 inch wide.
Shape half of the meat mixture into an 8x4x2 inch loaf in the prepared pan. Lenghtwise down the center of the loaf form an indention and place the sticks of cheese inside. Top with remaining meat mixture sealing edges tightly.
Bake at 350 oven 65 to 70 minutes, or till no pink remains inside. Top with remaining spaghetti sauce. Bake 4 to 5 minutes more. If desired, slice loaf and place in sandwich buns. Top each serving with additional spaghetti sauce, green pepper rings and grated Parmesan cheese, if desired.
For individual loaves, prepare meatloaf as directed above except shape half of the meat mixture into 6 rectangles, each about 4 1/2X2 inches. Press one stick of cheese into each rectangle. Top with remaining meat mixture, sealing edges tightly. Bake in a 350 oven about 35 minutes or till no pink remains inside. Top logs with remaining spaghetti sauce. Bake 4 to 5 minutes more.
