Ingredients
- Non-aerosol cooking spray
- 3 slices whole wheat bread, torn into 1/2-inch cubes
- 1 1/2 cups egg substitute
- 1 (10-oz.) package frozen chopped broccoli, thawed and drained
- 1 cup shredded low fat Cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup low fat milk
- 2 teaspoons Dijon mustard
- 1/2 teaspoon garlic powder

Preparation
Step 1
Preheat oven to 375 degrees. Coat a 9-inch pie plate with cooking spray; arrange bread cubes on the bottom. In a medium bowl, combine egg substitute, broccoli, cheeses, milk, mustard and garlic powder; pour mixture evenly over the bread cubes and press gently to create a level surface. Bake for 30 to 35 minutes or until golden brown and center is firm. Let quiche sit for 10 minutes before serving.
