Ingredients
- 6 tablespoons paprika
- 2 tablespoons freshly ground black pepper
- 2 tablespoons coarse salt (kosher or sea salt)
- 1 tablespoons chili powder
- 2 tablespoons brown sugar
- 3 pinches cayenne pepper
- 1 1/2 pounds lean pork tenderloin, cut into 3- or 4-ounce pieces

Preparation
Step 1
Preheat oven to 350 degrees. In a small bowl, combine first 6 ingredients (paprika through cayenne pepper); thoroughly rub both sides of each piece of pork with spice mixture. Heat an ovenproof skillet over medium-high heat until hot; pan-sear each piece of pork on both sides until golden brown. Transfer pan to the oven and bake for 6 to 8 minutes per inch of thickness, or until pork is cooked through.

SERVING SUGGESTION: Add steamed red skinned potatoes.
KOSHER: Use boneless skinless chicken breast meat instead of pork.
