SQUASH*****Roasted Baby Pattypan Squash 1 Picture

Ingredients

  • 2 generous servings
  • 1/2 pkg. baby pattypan squash from Costco (about 20-25 baby squash, approximately)
  • good splash of olive oil
  • Malden salt and freshly ground pepper
  • 1 tbsp. becel
  • 1 tbsp. shredded parmesan cheese
  • Malden salt and freshly ground pepper

Preparation

Step 1

Wash squash and trim ends, if necessary. Cut in half lengthwise and put into a bowl. Toss with a splash of EVOO and season lightly.

Preheat oven to 475 and line a baking sheet with a piece of parchment paper for easier cleanup.

Place squash cut side down on baking sheet and bake, without turning, for 15 minutes until golden brown on the bottom and soft.

Put the squash back into the bowl, add the becel and the cheese and another bit of salt and pepper and toss to coat.

I ate a good 2/3rds of this and Dan almost finished all of his portion. Very mild in flavour.
