Kefta with Two Sauces

Ingredients
- 1 1/2 lb. ground lamb or beef
- 4 t ground cumin
- 1/4 C chopped Italian parsley
- 1 t salt
- 1/2 t freshly ground pepper
- Pinch of cinnamon
- 1 med. onion, coarsely grated
- 1 t butter
- 2 cloves minced garlic
- 1 C full-fat plain yogurt
- 1 C tomato sauce
- Pinch of cayenne
- 2 T olive oil
- 4 large pitas, warmed & quartered

Preparation
Step 1
In bowl, combine meat with 2 t cumin, parsley, salt, pepper & cinnamon. Squeeze any excess liquid from the grated onion; add to meat. Mix well. Form meat into 8 oval patties.
Melt butter in small skillet. Add garlic & cook over mod heat, @ 1 min.
Transfer to small bowl & whisk in yogurt. Season with salt & pepper. In smae skillet, warm tomato sauce over mod heat & stir in cayenne & remaining 2 t of cumin.
In non-stick skillet, heat oil til shimmering. Add kefta & cook over mod heat, turning occasionally, til cooked thru, @ 10 min.
Place pitas on plates & top with kefta. Spoon some tomatoe & yogurt sauce over kefta & serve.
