Ingredients
- 2 C flour
- 1 t baking soda
- .5 t salt
- 1 C shortening
- 1 C granulated sugar
- 2 eggs
- 1 can 8.25 oz crushed pineapple with juice
- 1 T vanilla
- 2 C quick oatmeal
- 1/2 C shredded coconut
- 1 C chopped nuts
- 1 package (12 oz) chocolate chips

Preparation
Step 1
Heat oven to 375. Mix flour, baking soda and salt, set aside. Beat together shortening in sguard. Beat in eggs unitl flully. Stir in pineapple, vanilla and dry ingredients. Blend well. Sthir in oatmeal, nuts, coconut, and chocolate chips. Dropby teaspoonfuls onto ungreased cookie sheets, about 2" apart. Bake for 12-15 min.
