Ingredients
- 9 large eggs room temp
- 1/4 C butter mile
- 1/2 C flour
- 1/2 C semolina flour
- 1 C panko breadcrumbs
- 1 t salt

Step 1
Gently lower 6 eggs into large saucepan of boiling water, reduce heat to medium and simmer 6 min for soft biled eggs. Drain, cover eggs with cold water and cool. Very gently crack and peel eggs. Whisk remaining 3 eggs, butter milk, in medium bowl. Whisk both flours into another bowl. Mix panko and salt in a third bowl. Working with 1 soft-boiled egg at a time, gently roll in flour mixture then egg, then panko. Place on rimmed baking sheet. Preheat oven to 325. Pour enough oil into large saucepan to reach depth of 2 inches. Heat oil to 375. Working in two batches, fry eggs until brown.
