Ingredients
- 3 1/4 cups chopped watermelon
- 2 TBS honey
- 2 TBS water
- 1 tsp vinegar
- 1 tsp grated fresh ginger
- 2 ripe kiwi, peeled, halved lengthwise and sliced thin
- 1 quart strawberries, hulled and quartered

Step 1
1. Combine 1/4 cup chopped watermelon, honey, water, vinegar and ginger in saucepan and mash w/ potato masher until watermelon breaks down. Bring to simmer over medium heat and cook until honey dissolves, about 2". Cool to room temperature and then strain, reserving juices.
2. Toss kiwi, strawberries, remaining watermelon and reserved fruit juice in large bowl. Let sit 5", serve.
