Ingredients
- 2 1/2 cups water, lukewarm
- 2 tablespoons active dry yeast
- 1/2 cup honey, or sugar
- 4 tablespoons melted butter, or canola oil
- 3 eggs
- 1 tablespoon salt
- 1/2 cup raisins, optional
- 8 cups flour, may need more

Step 1
1. Place water in large bowl. Sprinkle with yeast. Beat in honey, butter, eggs, and salt. Add in raisins, if using, then flour, 1 cup at a time, switching from whisk to wooden spoon, to floured hands as the dough thickens. Knead in the bowl a few minutes, until smooth and elastic and no longer sticky. Cover and let rise until doubled, about 90 mins.
2. Punch down and turn out onto floured surface. Halve dough and knead each half 5 mins, adding flour as necessary. Divide into thirds and braid each half. Place on two sprayed baking sheets. Cover and let rise until doubled, another hour or so.
3. Heat oven to 375.
4. Beat egg, brush over each braid. Bake about 40 mins, Cool on rack 30 mins before eating (yeah, right).
