Ingredients

  • 2 lbs large potatoes (4-5)
  • 1/4 cup extra-virgin olive oil
  • 8 cloves garlic, crushed
  • 2 Tablespoons fresh sage, chopped
  • 2 Tablespoons fresh rosemary, chopped
  • Salt and pepper

Preparation

Step 1

Preheat oven to 400 degrees.

Peel and cut potatoes into 2" wedges. Place them in a pot of cold water and bring to a boil. Drain potatoes immediately and set aside.

Place olive oil and garlic in a roasting pan and heat on top of the stove. When the oil is hot, add the potatoes, herbs, salt and pepper.
Cook for 5 minutes on top of the stove , turning frequently to mix herbs and seasoning.

Place roasting pan in the oven for 20-30 minutes, until potatoes are golden brown.
