Ingredients
- 1 (3-t04-pound) broller/ fryer chicken, cut into 8 pieces
- 2 tablespoons plus 112 cup olive 011,not extravirgin
- Kosher salt
- Freshly ground black pepper
- 5 sprigs fresh thyme
- 40 cloves garlic, peeled

Preparation
Step 1
Preheat oven to 350 degrees. Rub chicken pieces with 2 tablespoons olive oil, then all over with salt and pepper .:
In a 12-inch straight-sided oven-safe saute pan over high heat. cook the chicken for 5 to 7 minutes per side,
until nicely browned. Remove pan from the heat. Add the remaining 1/2 cup oil, thyme and garlic cloves. Cover and
bake for 1 1/2 hours. Remove pan from the oven and set aside for 15 minutes
with the lid on. Remove chicken and garlic cloves to serving platter.
