Ingredients
- 1 1/3 C. unsifted cake flour
- 1/4 C. granulated sugar
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 4 T. butter
- 1 large egg
- 1/3 C. milk
- 2 tsp. vanilla extract
- 1 1/2 lb. cooking apples, peeled, cored and thinly sliced (about 3 C.)
- 1/3 C. apple jelly
- 2 T. light brown sugar
- 1/4 tsp. ground cinnamon

Preparation
Step 1
1. Heat oven to 400 degrees. Grease and flour 9 inch square baking pan.
2. In medium sized bowl, combine flour, sugar, baking powder and salt. With pastry blender or 2 knives, cut in 3 T. butter until mixture resembles crumbs.
3. In small bowl, beat together egg, milk and vanilla; stir into flour mixture until just moistened. Spread evenly in prepared pan.
4. Arrange apples in rows over batter. Cover pan tightly with aluminum foil and bake 20 minutes. Remove foil and bake 10-15 minutes longer or until toothpick inserted in center of cake comes out clean.
