Ingredients

  • 3 tomatoes
  • 1 onion
  • 1-1/2 tsp. cumin
  • 1-1/2 tsp. dried oregano
  • 1 tsp. salt
  • 2 cloves garlic, chopped
  • 48 oz. can chicken stock
  • 1 can white corn, drained
  • 1 can black beans, drained
  • 1 lb. chicken tenders, cut into bite-size pieces
  • limes
  • cilantro
  • jack cheese
  • corn chips/blue chips

Preparation

Step 1

In a blender, process tomatoes and onion till pureed. In a large stock pot, heat 1 tbsp. oil and cook cumin, oregano and garlic for 1 min. Add tomato puree mixture and cook for an additional 10 minutes on low. Add salt and stock and bring to a boil. Drop to simmer and add the beans, corn and chicken. Cook for an additional 10 minutes. Serve in large bowls and top with a squeeze of lime, chopped cilantro, avocado, a sprinkle of cheese, and corn chips. YUMMY!
