Sausage Vegetable Medley

My family loves sausages. Once in a while, I'll buy 3 - 4 pounds of fresh homemade sausages at a pizza restaurant and freeze some of it so I can make this recipe or add it to my spaghetti sauce. I used turkey sausages this time as I need to get back to some healthier eating after the holidays.

Ingredients
- 2 lbs. sweet Italian turkey sausages
- 5 potatoes, chopped
- 1 large onion, sliced
- 2 green peppers, sliced
- 2 - 3 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- salt & pepper, to taste

Preparation
Step 1
1. Preheat the oven to 350 degrees F.
2. Cut the sausages in half and place them in a large baking dish. Cut up the vegetables and add them to the baking dish. Drizzle the olive oil over everything. Season with garlic powder, Italian seasoning, salt and pepper. Mix well.
3. Bake for 1 hour uncovered, turning occasionally

~A Day Ahead~
Cut up the onion and green peppers. Store them in a covered container in the refrigerator. Cut the sausages in half, store them in a covered container, and refrigerate.
It doesn't sound like much, but it will save you time and dirty dishes when dinner time comes around the next day!
