Ingredients
- 1/4 cup olive oil
- 1 tbsp butter (optional)
- 6 large red onions (4-5 lbs), thinly sliced
- 2 tsp salt
- 1/4 cup balsamic vinegar
- 2 tbsp soy sauce
- 2 tbsp prepared mustard (any kind)
- 6 cups water
- 1/8 tsp freshly ground pepper
- Cheese-Topped Croutons

Preparation
Step 1
1) Heat olive oil over medium heat. Toss in the butter, if desired and swirl until it melts into the oil.
2) Stir in the onions and salt, reduce to medium-low. Cook, stirring occasionally for about 30 minutes, or until the onions become deep golden brown and very soft.
3) Add vinegar, soy sauce, and mustard. Cook, stirring, for 5 minutes.
4) Add water and bring to a boil. Reduce heat and simmer, partially covered, and simmer gently for 15 minutes.
5) Season with salt/pepper. Top each bown with a crouton.
Croutons:
Bake sliced baguette (1/2 inch slices) at 350 for 5 minutes. Add shredded cheese (swiss, parm, etc) and broil for about 3 minutes.
