  • 2 cups plus 1-2 tbspns flour
  • 2 tspns baking powder
  • 1/2 tspn salt
  • 1/4 cup (1/2 stick) unsalted butter, softenend
  • 3/4 cup sugar
  • 1 lg. egg
  • 1/2 cup milk
  • 1 pint blueberries
  • 1/4 cup (1/2 stick) unsalted butter , softened
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/2 tspn cinnamon

Preparation

Step 1

preheat to 375F
Grease an 8 inch springform pan. Set aside
Mix together the 2 cups flour, baking powder, and salt. set aside. Cream the butter and sugar until fluffy, about 3 mins. Beat in the egg. Add the flour mixture in 3 parts, alternating with the milk. Toss the berries with the remaining tbspn or 2 of flour and fold in. Pour batter into the prepared pan. Set aside.
combine ingredients for topping with a fork to make a crumble mixture. Sprinkle this over the batter, spreading it with your hand if you like. Bake for 1 hr. then test for doneness. When the cake has cooled, run a knife around the edges and lift out of the pan. Serve it with whipped cream.
