Mediterranean Apple Puff Pancakes with Cinnamon Custard Sauce

Ingredients
- Pancakes:
- 4 teaspoons butter
- 3 apples, thinly sliced
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 4 eggs
- 1 cup skim milk, or a mixture of 3/4 cup milk and 1/4 cup whipping cream
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- Cinnamon-Custard Sauce
- 1/2 cup nonfat dry milk
- 1/4 cup granulated sugar
- 1 1/2 tablespoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1 dash salt
- 1 cup water
- 1 egg yolk, well-beaten
- 1/2 teaspoon vanilla

Step 1
1. To make pancake: Preheat oven to 425 degrees. Melt butter in 4 individual ovenproof dishes, or in a 10- or 12-inch skillet with an ovenproof handle. Mix sugar and cinnamon. Layer apples in melted butter and dust with cinnamon-sugar mixture. Cover with foil and bake about 10 minutes.
2. Whirl eggs in blender or food processor. Pour in the nonfat milk or milk-cream combination, vanilla and flour, and continue whirling for 1 minute. Carefully pour batter on the sizzling hot apple mixture. Bake, uncovered, 10 - 20 minutes, until golden and puffed. Serve immediately with Cinnamon-Custard Sauce.
3. To make sauce: In a 4-cup measuring cup (to prevent splattering), combine all sauce ingredients except for vanilla and heat on high in the microwave, stirring frequently, until mixture comes to a boil and thickens (2 - 3 minutes). Remove and stir in vanilla. Serve warm over pancakes.
These were delicious and so easy and healthy. This will be repeated again and again!
