  • 3 carrots, cut into 2" chunks
  • 3 ribs celery,cut into 2" chunks
  • 2 heads garlic, halved
  • For the Roast;
  • Brown in 1/4 cup vegetables oil and
  • Roast with:
  • 1 center-cut pork loin, chine
  • removed (4-7 lb.), trimmed
  • Salt and pepper
  • Pan Vegetables
  • For the Glaze;
  • Melt; Brush Loin with:
  • 1/4 cup molasses
  • 1/4 cup currant jelly

Preparation

Step 1

Preheat oven to 425 F; trim loin.
Prepare pan vegetables as directed above, halving the garlic heads through
their"equators." Set vegetables aside.
Brown the prepared pork loin in oil in a regular or nonstick roasting pan over medium-high heat until seared on all sides. Remove roast, add the vegetables, then rest the loin on the vegetables. Roast pork in the oven for 30 minutes. Melt molasses and jelly for the glaze in a saucepan over low heat. After pork has roasted 30 minutes, brush with glaze, reapplying it every 10 minutes until the roast reaches an internal temperature of 145. Before carving, allow pork to rest 20-30 minutes, tented with foil.
