Peanut Butter Sandwich Cookies with Chocolate Hazelnut Filling 1 Picture

Ingredients

  • Makes 3 dozen sandwich cookies:
  • 1 1/4 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup peanut butter
  • 1 stick unsalted butter, at room temperature
  • 1 cup packed brown sugar
  • 1 egg
  • 2 tsp pure vanilla extract
  • For the filling:
  • 3/4 cup chocolate hazelnut spread
  • 3 Tbsp milk
  • 3 Tbsp powdered sugar
  • Pinch of salt

Preparation

Step 1

Preheat the oven to 350 degrees. In a small bowl, whisk together the flour, baking soda and salt. In the bowl of a stand mixer, beat the peanut butter and butter on medium speed until blended. Add the brown sugar and beat until combined, scraping down the sides of the bowl as needed. Beat in the egg and vanilla, then add the flour mixture.

Using a small scoop, scoop out the dough and roll each portion into a ball. Place the balls about an inch apart on a cookies sheet that is lined with parchment paper or a baking mat. Flatten the cookies by making crisscross marks using the tines of a fork dipped in granulated sugar.

Bake the cookies for 8-9 minutes or until the edges are lightly browned. Cool on the cookie sheet for 5 minutes, then transfer to a wire rack to cool completely.

While the cookies are cooling, make the filling. Combine all of the ingredients in the bowl of a stand mixer and beat until well combined and smooth.

Spread the filling on the bottoms of half of the cookies, using about a teaspoon per cookie, then top with the remaining cookies, bottom sides down.
