Sandwich: Catfish Sliders

I used to visit my Uncle Rob in Sanford, North Carolina and the first place we would go to was the local fish house. We would dine on the best catfish this side of the Mississippi and they had the best hush puppies. This is a different variation of their menu.

Ingredients
- 4 catfish filets: skinned and boned
- 1/2 cup flour
- 1/4 cup cornmeal
- 2 teaspoons kosher salt
- 1/2 teaspoon pepper
- 2 tablespoons Old Bay Seasoning
- Peanut Oil for deep fry
- Coleslaw
- Tartar sauce
- Brioche mini buns

Preparation
Step 1
Mix the flours and seasoning together in a shallow dish, and then dredge the catfish in the flour and then deep fry on 360* for about 8 minutes until crispy.
Let cool a little then place in bun and top with tartar sauce and coleslaw.
