Ingredients
- Hoisin Dipping Sauce :
- 12-16 Boston lettuce leaves
- 8 ounces cocktail shrimp
- 1 cup cooked shredded chicken breast
- 1/2 cup finely chopped peanuts
- 1/2 cup shredded coconut
- 2 cups rinsed, drained, and dried bean sprouts
- 2 limes, seeds removed, then finely chopped, rind and all
- 4-6 small hot chiles, slivered
- 4-6 slivered scallions
- 1 cup fresh coriander sprigs
- 1/4 cup commercially-prepared hoisin sauce
- 1/4 cup rice vinegar
- 2 Tablespoons fish sauce
- 2 Tablespoons grated or minced ginger-root
- 1 teaspoon sugar

Step 1
Prepare the first 10 ingredients, and arrange on plates or a serving platter. Make the dipping sauce, and divide into small serving bowls. Ingredients of choice are piled atop individual lettuce leaves, rolled up, and dipped into sauce.
