Jerry's Italian Lettuce Salad

Ingredients
- 1 head romaine lettuce
- 1/4 cup olive oil
- 3 tbsp red wine vinegar
- 1/4 cup parmesan cheese
- 2 tbsp Dijon mustard
- 1 tsp minced garlic
- 1/4 cup bread crumbs, seasoned
- 1 jar artichoke hearts (6.5 oz) not marinated, quartered
- 1 jar pimientos (2 oz)
- 1/4 large red onion

Preparation
Step 1
1. Tear romaine lettuce into bite sized pieces and put in large bowl. Set aside.
2. Combine olive oil, vinegar, Dijon mustard, and garlic. Drizzle over salad and toss.
3. Add thin sliced onion, pimento, and quartered artichoke hearts. Sprinkle parmesan and bread crumbs over salad evenly and toss all ingredients until evenly mixed. Refrigerate up to 2 hours before using.
This was delicious and very easy. Didn't have artichokes or pimento, so subbed chickpeas. Used only about 2 tbsp olive oil. Delicious and a definite repeater!
